I decided to try making shakshuka today. It’s eggs poached in a mixture of diced tomatoes, onions, red peppers, and spices that’s topped with feta cheese. It was very tasty and definitely a better start to the day than my typical coffee with a side of more coffee. I did still have coffee with a side of more coffee though.
It was quite tasty, but I think I might prefer the eggs fried and layed on top. Put it over a bed of cous cous, and I think it would be a fine dinner.
Now it’s time to take Ruby for a walk before the storms roll in.

I like making shakshuka. Super easy. I do agree about the eggs tho, I’m not a huge fan of eggs to begin with, and I always end up over-cooking them when I make this, and fried eggs just taste better to me.

Fried eggs are by far my favorite. I was pleasantly surprised that these did turn out very well. I typically overcook eggs anytime I try to do anything but fry them.
I’ll definitely make this again. I occasionally get fresh eggs from one of my coworkers, and this would be an excellent way to serve those. I may add some spinach as well if I have it on hand.
